2017 Dreaming Dog Mixed carton, Margaret River by Chapman Grove , Tasting Notes: 3 bottles of Dreaming Dog Sauvignon Blanc 2017 Colour clear and bright with an intense bouquet, followed by a rich palate flavour of tropical fruits and some minerality , beautiful fine acidity rounds out the wine in the mouth. Screwcap Alc/Vol 12.5% 3 bottles of Dreaming Dog Semillon Sauvignon Blanc 2017 Colour slight green tinge with some grassiness on the nose. The palate is generous in flavours of lime & lychees and shows good structure and balance, with great length. Screwcap Alc/Vol 12.5%, 6 bottles of Dreaming Dog Cabernet Shiraz 2017 Herbaceous style with aromas of green leaves and musk over a Blackcurrant and Blackberry fruit background. 2016 Four Jacks Chardonnay (12 x 750ml), Manjimup by Peos Estate, 13.5% Alc/Vol, BLEND 100% Chardonnay. COLOUR Pale straw with green tints. AROMATICS Lifted nose of white stone fruit, citrus blossom, raw cashew with subtle toasty notes. PALATE Full and fleshy mouthfeel, showing intense white nectarine and citrus leaf on the palate with underlying raw cashew and subtle toasty oak, supported by a well integrated acid backbone, great length with a crisp, lingering finish. OAK MATURATION 9 months maturation in French oak. AGEING POTENTIAL 4-5 years. WINEMAKING The chardonnay grapes were picked at optimum ripeness during the coolest period of the night to help retain the vibrant primary fruit flavours. It was transported directly to the winery post-harvest, crushed and pressed to tank and allowed to cold settle. The juice was racked to barrel for fermentation. The ferment temperature was controlled, helping to retain the fresh primary fruit aromas while also developing a complex fermentation bouquet and increased palate weight and texture. Post ferment the wine was fined with traditional additives, cold stabilised and bottled.

2019 Margaret River Range Sauvignon Blanc Semillon (12 x 750ml), Margaret River by Sandalford Estate, 12.5% Alc/Vol, Tasting Notes Colour: Pale lemon. Nose: Up front blackcurrant buds and a lemon sherbet twist. There’s the classic tropical notes of passionfruit and gooseberries and then flinty notes as the wine opens up. Palate: Abundant tropical and citrus flavours as per the nose, but they continue to evolve as this wine opens up. There’s quince and a floral edge. The palate has a minerality to it, but is textural and lively. This wine has an elegant balance and wonderful length on the finish. It definitely has that drinkability factor.

2017 Estate Reserve Chardonnay (6 x 750ml), Margaret River by Sandalford Estate, 12.9% Alc/Vol, Tasting Notes: Colour: Pale lemon Nose: Up front peaches, nectarines and cashews. As it opens, it evolves into grapefruits & candied lemons. Palate: This is an austere wine, stonefruits and citrus in abundance with cashews and honey in support. The French oak adds a layer of vanilla and toasty notes. The oak is beautifully balanced with the fruit and adds a lovely texture to the palate. 2010 The Yilgarn Blanc Sauvignon Blanc (6 x 750ml), Margaret River by Smithbrook, 14% Alc/Vol, Tasting Notes: The 2010 Pemberton growing season was typical for the region, A cool, wet start to the season was followed by cool nights with warm days later in the season with the occasional coastal showers allowing for good flavour development and excellent acid retention. 2017 Killerby Semillon (6 x 750ml), Margaret River by Killerby Estate, 12.5 % Alc/Vol, Vineyard Notes: Semillon grapes were sourced from a vineyard north of the Killerby Cellar Store on Caves Road, Wilyabrup. This vineyard is low yielding and is exposed to the prevailing sea breezes keeping the vigour low to moderate. Harvesting Notes: The grapes are harvested in the early morning to retain the fresh, crisp fruit flavours and natural acidity. Winemaking Notes: Grapes were crushed ever so gently to the press. Juice was drained and settled prior to fermentation in a mix of mature French oak. WINE CHARACTERISTICS Colour: Pale green. Nose: Characteristically uplifting aromas of nettles, lemongrass and citrus with mild grassy tones. Palate: Fresh citrus flavours of lemon with spice and weighty texture balanced by mineral acid backbone and a long refreshing chalky palate. Cellaring Notes: 3 years. Food Pairing: Drinks well with food that has texture and depth such as mild Asian dishes.

Aromas of red cherry and strawberry with an underlying savoury nuance. A dry style with a savoury mid-palate that is well supported by red cherry and strawberry fruits of Summer. 2017 Loose Leaf Chardonnay (12 x 750ml), Margaret River by Forester Estate, 12.7% Alc/Vol, Tasting Notes: COLOUR Pale straw. AROMA Clean and bright with toasty oak and a mealy-leesy character adding richness. There is also peaches and cream with an underlying citrus note. PALATE Soft and rich with a creamy texture. Nutty oak, peach, citrus and cream lead to a firm toasty finish. FOOD PAIRING Chicken, peach, mango and macadamia salad. WINEMAKING NOTES Fruit is sourced from the northern Margaret River sub-region of Yallingup. A balanced crop was ripened in the low yielding and mild vintage of 2017. Adequate spring rainfall and a long, relatively dry summer provided perfect ripening conditions. Modern white winemaking techniques are employed in the production of this Chardonnay, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. It is allowed to cold settle for 48 hours before being racked in a clarified state ready for fermentation in tank and barrel. Regular lees stirring was employed to help add texture and richness to the wine.

The nose displays intense and lifted tropical fruits – rockmelon, fresh pineapple and ripe citrus. There is a hint of development with ‘toast n honey’ peeping through. A ripe and fruit driven style with flavours of stonefruit and pineapple. This wine is in the same ilk as the famous Houghton’s White Burgundy which aged for well over 10-15 years. Enjoy over the sunny Autumn and Winter with a fruit and cheese board or Asian salad. James Halliday wrote in the 2012 Wine Companion …. “A blend of chardonnay, sauvignon blanc, semillon and riesling. Modern white wine making techniques were used with temperature controlled critical from the vineyard through to the winery. The fruit is de-stemmed and crushed then must chilled and pressed off the skins quickly. It is allowed to settle for 48-72 hours before being racked in a clarified state to a fermentation tank. A range of selected yeasts are employed on the two different parcels of fruit before being transferred to temperature controlled stainless steel tanks.

2017 Leaping Lizard Cabernet Merlot (6 x 1lt), Western Australia by Ferngrove Vineyards, 14.0% Alc/Vol, Tasting Notes: Appearance Crimson purple Nose Violet and florals emanate from this fragrant wine, with ripe blackberry and plum. Palate A dark plummy palate with generous mouth coating tannis. The finish is fine and long. Vinification The Cabernet Sauvignon and Merlot grapes were both harvested in the early morning when flavours were rich and ripe, and crushed to closed fermenters for maceration on skins prior to 8 day ferment. Wine was drained and underwent malo-lactic fermentation prior to controlled maturation in a range of French oak for 18 months.

2018 You, Me & The Gatepost Sauvignon Blanc (6 x 750ml), Frankland River by Ferngrove Vineyards, 13.5% Alc/Vol, Tasting Notes: NOSE lemon myrtle, passionfruit and tropical notes. PALATE A true expression of cool climate Sauvignon Blanc with hints of citrus, grassy and tropical notes. The rich and flavoursome palate is balanced by zippy acidity and a lingering finish. VINIFICATION The fruit for this wine was sourced entirely from the cool climate region of Great Southern in Western Australia. Once the fruit is crushed and destemmed the chilled juice is cold settled overnight and then racked. The wine was fermented at low temperatures to preserve the tropical fruit flavours. This wine is bottled young. CELLARING Drink now whilst fruit flavours dominate. WINEMAKERS COMMENTS This wine is a great example of a cool climate Sauvignon Blanc and demonstrates how well this grape variety can perform from cooler regions. This is a lifted, refreshing and approachable wine that will appeal to a wide range of consumers.

2017 Prendiville Reserve Cabernet Sauvignon Shiraz (6 x 750ml), Margaret River by Sandalford Estate, 14.3% Alc/Vol, Tasting Notes: Colour: Dark ruby red. Nose: A complex meld of flavours that really benefits when given time to open up and evolve in the glass. This wine starts with savoury spices of bay leaf, juniper and star anise. It further opens to reveal rich dark berries, particularly blackberries and sweet blueberries, a hint of violets. Palate: Like the nose, this wine will keep evolving in the glass as you’re enjoying it. Blackberries and sweet blueberries are in abundance with the same savoury spices evolving to cinnamon and nutmeg flavours. The French oak adds layers of cedar and mocha with the tannins smooth and silky soft, yet full of power. They, in combination with the acid balance, build a beautifully textured palate, meaning the wine and all of it’s complex flavours will linger on long after you’ve enjoyed it. This wine whilst drinking beautifully now, is just a baby and with careful cellar maturation for 10 years or more, this limited release of the Prendiville Reserve Cabernet Sauvignon Shiraz will certainly reward the patient. 2019 1840 Chenin Blanc (6x 750ml), Swan Valley by Sandalford Estate, 12.2% Alc/Vol, : Winemakers Comments Picked in early February 2019, these Chenin Blanc grapes were immediately crushed and pressed, with only the free run juice being used for this wine. The juice was all fermented in barrel but with a slight difference – whilst most of them were old French oak barrels, there was also 2 stainless steel barrels used. All barrels were inoculated with a selected yeast strains and the wine was left on lees for 5.5 months in barrel before blending and bottling. Tasting Notes Colour: Pale lemon with green edges Nose: Honey and quince with a floral lift. Palate: The flavours from the nose meet crisp green apples, with almonds and beeswax giving a beautiful savoury edge. This wine is textural on the palate and has a crisp finish with wonderful length. Whilst drinking beautifully now, this wine will continue to evolve into a richer and more complex wine with age. RRP $180.00

2016 Four Jacks Chardonnay (12 x 750ml), Manjimup by Peos Estate, 13.5% Alc/Vol, BLEND 100% Chardonnay. COLOUR Pale straw with green tints. AROMATICS Lifted nose of white stone fruit, citrus blossom, raw cashew with subtle toasty notes. PALATE Full and fleshy mouthfeel, showing intense white nectarine and citrus leaf on the palate with underlying raw cashew and subtle toasty oak, supported by a well integrated acid backbone, great length with a crisp, lingering finish. OAK MATURATION 9 months maturation in French oak. AGEING POTENTIAL 4-5 years. WINEMAKING The chardonnay grapes were picked at optimum ripeness during the coolest period of the night to help retain the vibrant primary fruit flavours. It was transported directly to the winery post-harvest, crushed and pressed to tank and allowed to cold settle. The juice was racked to barrel for fermentation. The ferment temperature was controlled, helping to retain the fresh primary fruit aromas while also developing a complex fermentation bouquet and increased palate weight and texture. Post ferment the wine was fined with traditional additives, cold stabilised and bottled.

2017 Killerby Semillon (6 x 750ml), Margaret River by Killerby Estate, 12.5 % Alc/Vol, Vineyard Notes: Semillon grapes were sourced from a vineyard north of the Killerby Cellar Store on Caves Road, Wilyabrup. This vineyard is low yielding and is exposed to the prevailing sea breezes keeping the vigour low to moderate. Harvesting Notes: The grapes are harvested in the early morning to retain the fresh, crisp fruit flavours and natural acidity. Winemaking Notes: Grapes were crushed ever so gently to the press. Juice was drained and settled prior to fermentation in a mix of mature French oak. WINE CHARACTERISTICS Colour: Pale green. Nose: Characteristically uplifting aromas of nettles, lemongrass and citrus with mild grassy tones. Palate: Fresh citrus flavours of lemon with spice and weighty texture balanced by mineral acid backbone and a long refreshing chalky palate. Cellaring Notes: 3 years. 2016 Four Jacks Chardonnay (12 x 750ml), Manjimup by Peos Estate, 13.5% Alc/Vol, BLEND 100% Chardonnay. COLOUR Pale straw with green tints. AROMATICS Lifted nose of white stone fruit, citrus blossom, raw cashew with subtle toasty notes. PALATE Full and fleshy mouthfeel, showing intense white nectarine and citrus leaf on the palate with underlying raw cashew and subtle toasty oak, supported by a well integrated acid backbone, great length with a crisp, lingering finish. OAK MATURATION 9 months maturation in French oak. AGEING POTENTIAL 4-5 years. WINEMAKING The chardonnay grapes were picked at optimum ripeness during the coolest period of the night to help retain the vibrant primary fruit flavours. It was transported directly to the winery post-harvest, crushed and pressed to tank and allowed to cold settle. The juice was racked to barrel for fermentation. The ferment temperature was controlled, helping to retain the fresh primary fruit aromas while also developing a complex fermentation bouquet and increased palate weight and texture. Post ferment the wine was fined with traditional additives, cold stabilised and bottled.

2017 Sweet Red (12 x 750ml), Swan Valley by Sandalford Estate, 12.3% Alc/Vol, Tasting Notes: The grapes for this wine were harvested in April 2017. At the winery, they were immediately crushed and underwent one week fermentation in stainless steel tanks with a selected yeast strain. At the end of fermentation, the wine was pressed with the free-run and pressings blended together and inoculated for Malolactic Fermentation.
