2017 Loose Leaf Chardonnay (12 x 750ml), Margaret River by Forester Estate, 12.7% Alc/Vol, Tasting Notes: COLOUR Pale straw. AROMA Clean and bright with toasty oak and a mealy-leesy character adding richness. There is also peaches and cream with an underlying citrus note. PALATE Soft and rich with a creamy texture. Nutty oak, peach, citrus and cream lead to a firm toasty finish. FOOD PAIRING Chicken, peach, mango and macadamia salad. WINEMAKING NOTES Fruit is sourced from the northern Margaret River sub-region of Yallingup. A balanced crop was ripened in the low yielding and mild vintage of 2017. Adequate spring rainfall and a long, relatively dry summer provided perfect ripening conditions. Modern white winemaking techniques are employed in the production of this Chardonnay, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. It is allowed to cold settle for 48 hours before being racked in a clarified state ready for fermentation in tank and barrel. Regular lees stirring was employed to help add texture and richness to the wine.
