2014 Mad Fish Cabernet Sauvignon Merlot (6 x 1litre), Margaret River by Howard Park, 14.5% Alc/Vol, Tasting Notes: The Vintage The 2014 vintage from the south west of Western Australia was yet another great vintage and extends the succession of highly rated vintage since 2007. The typical weather pattern of sufficient yet below average winter rainfall; a blustery and impulsive spring followed by a warm, dry summer, set the stage for a promising outcome. Whilst noticeable, the native marri blossom was not enough to sate the resident bird populations and netting of vineyards is now embedded in the annual grape growing cycle. Vineyards and Regions Premium grapes from Western Australia’s cool climate grape growing regions are blended to create this wine. The traditional Bordeaux grape varieties which comprise the bulk of this wine are all well suited to the typical climatic conditions of these regions. Localised weather patterns contribute to variation in ripening cycles and harvest dates, giving rise to increased depth of flavour and complexity in the finished wine. Winemaking Madfish Premium Red is a modern blend of six traditional grape varieties and is crafted to produce a wine with a complete palate profile. After crushing, the grapes are fermented in stainless tanks with traditional pump over to extract colour, tannin and flavour. Maturation in French oak barriques for 8 months produces a wine packed full of ripe fruit flavours and supple oak tannins. Tasting Notes Deep, dense ruby and garnet in colour with characteristic Cabernet aromas of black and blue berry fruits and freshly rubbed dry herbs. The palate is rich and fleshy from the Merlot contribution, with juicy blackberry, fresh mushrooms and floral notes. Ripe open-knit fruit tannins are well integrated with the use of fine grain French oak.

2019 Estate Reserve Verdelho (6 x 750ml), Margaret River by Sandalford Estate, 13.2% Alc/Vol, Tasting Notes: Colour: Pale lemon. Nose: Orange blossom florals meld with quince paste and a hint of spiciness. Palate: This is one of my favourites. Definite floral notes, with a chalky minerality coming through. There are hints of citrus, with oranges through to lemons. This wine is textural and has a refreshing acid balance leading to wonderful length on the finish. It definitely has that drinkability factor. Drink now whilst young or for something different, this wine can be cellared. It will reward you as it evolves with age. RRP $ 150.00

2017 Bramble Lane Chardonnay (12 x 750ml), Western Australia by Rosabrook Estate, 13.5% Alc/Vol, Tasting Notes: WINEMAKER’S NOTE: Pale straw with some green. Fresh Chardonnay fruit with subtle oak aromas lift out from the glass. The palate is soft, creamy and refreshing with melon and peach fruit, finishing fresh and crisp. VINTAGE: A very cool and late vintage and a benchmark for whites from the region. VINIFICATION: Grapes were night harvested and the cold juice fermented in steel. The wine was oak matured, lightly fined, then clarified and bottled early to conserve the fine Chardonnay fruit flavours into the bottle.

2018 Ground To Cloud Rose Tempranillo (6x750 ml), Frankland by Black Brewing Co, 12.9%, BRONZE MEDAL, 90 Points, Alc/Vol, Tasting Notes: 100% Tempranillo - 100% Frankland River. A dry style rose that is fruity and refreshing with strawberries & cream that linger on the palate. Fruit was harvested at night to ensure low temperature and low colour extraction, once received once received we gently pressed the fruit to avoid deep coloration of the juice. The juice was then cold settled, racked and inoculated for fermentation which was conducted at 16 degrees. Once dry the rose was kept on fine lees for texture for about 3 months then racked off lees and clarified before bottling. RRP: $25.00 per bottle

2017 Birdsong Late Harvest (6 x 750ml), Western Australia by Byron & Harrold, 11.00% Alc/Vol, Tasting Notes: COLOUR Pale yellow with lime green hues. NOSE Bright, vibrant aromas of citrus tart, sweet floral notes, fresh jasmine. PALATE Fresh nashi pear, crisp apples, zesty lemon and lime, elegant, crisp acidity bring the flavours together to a fresh, clean finish. WINEMAKING The 2017 Birdsong ‘Autumn Harvest’ fruit was harvested in the early hours of the morning, preserving the delicate varietal flavours that define this cool climate wine. All fermentation was carried out in stainless steel, at cool temperatures to ensure the freshness and vibrancy of the fruit was retained. FOOD PAIRING Malaysian curry laksa. VINTAGE NOTES The 2017 vintage was one of the latest vintages in recent times, reminiscent more of the vintages of the 90’s. With an abundance of groundwater, soil temperatures remained cool in turn delaying budburst by three to four weeks. Flowering and fruit set were also exceptional due to the levels of groundwater. Although it was a challenging vintage (with some unseasonal downpours and a later start and finish), the combination of a long, cold wet winter and the mild summer has resulted in some exceptional fruit.

2021 Water Dancer Cabernet Merlot (12 x 750ml), Ferguson Valley by Willow Bridge Estate, 13.5% Alc/Vol, Tasting Notes: Estate grown from the spectacular hillside vineyard in the Ferguson Valley of the Geographe wine region, fruit is sourced predominately from the Blinman blocks which was planted in 1998. Soil is typically a deep layer of ironstone gravelly loam over red and yellow friable clay with slight westerly aspects at elevations of 220 to 250m above sea level. Water Dancer typifies the juicy and fleshy expression of the varieties from the Geographe region. A spectrum of flavours ranging from bright berry fruits, to darker plum and lashings of chocolate. Winemaking technique enhances the aromatic and flavour profile of the varieties whilst maintaining a long fine tannin structure. Tasting Note/Flavour Profile Generous lashings of ripe blackberry, plum and dark chocolate. Fleshy flavoursome palate of bright berry fruits and mocha hints. Cellaring Up to 6 years.

2018 Sweet Red (12 x 750ml), Margaret River by Sandalford Estate, 12.8% Alc/Vol, Tasting Notes: Vintage The 2018 vintage was a return to the fantastic conditions that WA is known for. The preceding winter and early spring rainfall provided a good base of ground water for the vines to thrive. November was warm and dry, setting up the vines perfectly through flowering and fruit set. An extended, dry and warm summer through to the end of picking in mid-April, produced outstanding fruit to make wine from. All grapes harvested this season are of exceptional quality and showing great varietal characteristics. Winemakers Comments Sweet red is a style for those wine drinkers who often find red wines somewhat dry and tannic. There is often a cultural aspect to this and out of respect of this we have made this wine to suit those who really enjoy this style of wine. Definitely a wine to serve chilled for best enjoyment. Tasting Notes Colour: Dark garnet red. Nose: This wine is full of sweet berry flavours. Blackberries, blueberries, mulberries and hints of raspberries. Palate: As for the nose, there are abundant berry flavours on the palate. Underlying the berries are savoury spices and mocha flavours. This wine is unmistakably a sweet red.

2019 Margaret River Cabernet Merlot (6x 750ml), Margaret River by Sandalford Estate, 14.4% Alc/Vol, Tasting Notes: Vintage Whilst the majority of Australia experienced a hot summer with above average temperatures, the southwest corner of WA experienced a relatively mild summer. Temperatures during the harvest period were below average. These milder conditions allowed for a slow ripening pattern for most varieties, resulting in excellent flavour accumulation at time of harvest. All grapes were harvested with an optimum balance of sugar, tannin and flavours. The resulting wines are displaying bright varietal characters with fresh, balanced acidity. Winemakers Comments The grapes were machine harvested during the cool of night in the second week of April. After destemming to static fermenters, the must was inoculated with a selected yeast isolate. The ferments were managed by twice daily pump overs to ensure optimal extraction of colour, flavour and tannins. After suitable extraction, based on taste, the wine was then drained and pressed to tank. After malolactic fermentation, the wine was matured with 25% new French oak and a portion in older French oak barriques, before blending and bottling. Tasting Notes Colour: Deep garnet red Nose: A deep and brooding nose of blackberry and redcurrant fruits, plum, wild mint, mulberry and chocolate box characteristics. The wine evolves and opens up in the glass revealing a real juiciness, along with oak spice, camphor and nutmeg to complement the ripe fruit notes. Palate: Generous, up front sweet fruit flavours of dark berries and plums that are balanced with savoury spice notes of bay leaf, fresh nutmeg and mocha. Medium weight with tight, fine grained tannin, supported by balanced acidity. This provides a lovely balance and a sustained finish to the wine. A wine that drinks well now, but will benefit from medium term cellaring.

2016 Chapman Semillon Sauvignon Blanc (12 x 750ml), Margaret River by Chapman Grove Estate, 12.5% Alc/Vol, Tasting Notes: Pale straw, with an attractive green tinge. Perfumed vibrant and fresh, this Semillon sauvignon blanc shows some lovely white tropical fruits, with subtle grassy overtones. 2019 Leaping Lizard Shiraz (12 x 750ml), Western Australia by Ferngrove Vineyards, 13.5% Alc/Vol, Tasting Notes: Vintage Overall a good vintage for Ferngrove, despite some challenging conditions. The growing season was generally cool and dry. This kept disease pressure very low, but the cool weather during flowering caused the fruit set to be well below the long-term average. The cooler season meant harvest commenced two weeks later than normal with the first lot of fruit coming into the winery at the end of February. A rain event in early March had no impact on fruit quality and was much appreciated by the red varieties. The exceptional management by the Ferngrove vineyard team, lower crop loads, and a bit of luck ensured the vines produced great fruit with reds of intense colour and richness. Appearance Crimson. Nose Satisfying aromas of satsuma plum, blackberry, blueberry and spice. Palate Dense amalgam of dark fruits, berries and plums, mouth coating tannins complete the palate. Vinification Shiraz was harvested with juicy black plum flavours and freshness. The grapes were harvested in the early morning and crushed to closed fermenters for maceration on skins prior to an 8 day ferment. The wine was drained and underwent malo-lactic fermentation prior to controlled maturation in a range of French oak for 11 months. Cellaring This wine will cellar for up to 5 years. Serve At room temperature 17o C. Food Enjoy with roasted lamb shanks and rosemary jus.

2020 Margaret River Range Sauvignon Blanc Semillon (6 x 750ml), Margaret River by Sandalford Estate, 12.3% Alc/Vol, Tasting Notes: Vintage 2020 was a vintage like no other. Whilst a global pandemic changed the way people lived their lives, Margaret River experienced a near perfect vintage. The preceding Spring growing season was warmer than average resulting in earlier bud burst and grape development. Grape yields were lower than average which led to one of the earliest harvests on record. The near perfect growing season allowed the winemakers to harvest fruit at optimal flavour and sugar ripeness. The resulting wines display wonderful fresh varietal characters. Winemakers Comments Fruit for this wine has been sourced from our Wilyabrup Estate Vineyard in Margaret River. All grapes were machine harvested in the cool of night before transport to the winery to be destemmed before pressing. Only the free-run juice fractions are utilised for fermentation. Low solids and cool ferment temperatures in stainless steel ensure the fruit characters are preserved to their utmost in the resultant wine. Tasting Notes Colour: Pale straw. Nose: Up front blackcurrant bud and lemon citrus. Classical tropical fruit salad notes with aromas of passionfruit, gooseberry, lychee and lemon grass notes as the wine opens up in the glass. Palate: Abundant tropical fruits and citrus flavours as per the nose which continues to evolve as this wine opens up. The palate has a minerality to it, but is textural and lively. This wine has a degree of elegance, well balanced and wonderful length on the finish. A drink now style.

2017 Four Jacks Shiraz Cabernet (12 x 750ml), Manjimup by Peos Estate, 13.7 Alc/Vol, Tasting Notes: COLOUR: Deep Plum, AROMATICS: Sweet savoury spice with subtle plum notes, PALATE: Soft rich plum and savoury flavours with a long finish, OAK MATURATION: 12 months in 100% oak barrels, WINEMAKING: machine harvested fruit was de-stemed and crushed into 8-ton fermenters and pumped over with aeration twice a day. The fruit was fermented at around 25 C and then allowed to warm up for a long post fermentation maceration . The wine was then transferred into barrels for its malo-lactic fermentation, allowing a soft intergration of the grape and wood tannins. .

2017 Walker & Wilde Cabernet Sauvignon (12 x 750ml), Manjimup by Graphite Road Estate, 14.5% Alc/Vol, Tasting Notes: COLOUR Dark red with a ruby hue. NOS E Aromas of blueberry, mint and cassis. PALAT E A well-structured palate with intense flavours of blueberry and dark chocolate. Oak spice, elegant tannins and a fresh acidity guides flavours to a long, lingering finish. W INEMAK ING NOT E S The fruit was machine picked then de-stemmed/ crushed into open fermenters and inoculated. The ferments were pumped over with aeration twice a day; temperature was held around 25°C. The wine was then drained to barrel for its Malo-lactic fermentation, allowing a soft integration of the grape and oak tannins. The wine was blended, fined with egg whites and bottled after 15 months maturation. The wine is further aged in bottle before release. V INTAGE R EPOR T The lead up to the 2017 vintage was slow, with a cool beginning to the year. Fruit set was high, so bunches were also plentiful. The cool conditions allowed slow, meticulous ripening, resulting in elegant flavours, crisp natural acids and balanced sugar accumulation. Patience was rewarded with beautifully ripened fruit arriving to the winery.

2017 Secret Squirrel Late Harvest (6 x 750ml), Western Australia by Byron & Harrold, 9.5% Alc/Vol, Tasting Notes: COLOUR Pale yellow with lime green hues. 2019 Margaret River Cabernet Merlot (6 x 750ml), Margaret River by Sandalford Estate, 14.4% Alc/Vol, Tasting Notes: Vintage Whilst the majority of Australia experienced a hot summer with above average temperatures, the southwest corner of WA experienced a relatively mild summer. Temperatures during the harvest period were below average. These milder conditions allowed for a slow ripening pattern for most varieties, resulting in excellent flavour accumulation at time of harvest. All grapes were harvested with an optimum balance of sugar, tannin and flavours. The resulting wines are displaying bright varietal characters with fresh, balanced acidity. Winemakers Comments The grapes were machine harvested during the cool of night in the second week of April. After destemming to static fermenters, the must was inoculated with a selected yeast isolate. The ferments were managed by twice daily pump overs to ensure optimal extraction of colour, flavour and tannins. After suitable extraction, based on taste, the wine was then drained and pressed to tank. After malolactic fermentation, the wine was matured with 25% new French oak and a portion in older French oak barriques, before blending and bottling. Tasting Notes Colour: Deep garnet red Nose: A deep and brooding nose of blackberry and redcurrant fruits, plum, wild mint, mulberry and chocolate box characteristics. The wine evolves and opens up in the glass revealing a real juiciness, along with oak spice, camphor and nutmeg to complement the ripe fruit notes. Palate: Generous, up front sweet fruit flavours of dark berries and plums that are balanced with savoury spice notes of bay leaf, fresh nutmeg and mocha. Medium weight with tight, fine grained tannin, supported by balanced acidity. This provides a lovely balance and a sustained finish to the wine. A wine that drinks well now, but will benefit from medium term cellaring.

2014 Mad Fish Cabernet Sauvignon Merlot (6 x 1litre), Margaret River by Howard Park, 14.5% Alc/Vol, Tasting Notes: The Vintage The 2014 vintage from the south west of Western Australia was yet another great vintage and extends the succession of highly rated vintage since 2007. The typical weather pattern of sufficient yet below average winter rainfall; a blustery and impulsive spring followed by a warm, dry summer, set the stage for a promising outcome. Whilst noticeable, the native marri blossom was not enough to sate the resident bird populations and netting of vineyards is now embedded in the annual grape growing cycle. Vineyards and Regions Premium grapes from Western Australia’s cool climate grape growing regions are blended to create this wine. The traditional Bordeaux grape varieties which comprise the bulk of this wine are all well suited to the typical climatic conditions of these regions. Localised weather patterns contribute to variation in ripening cycles and harvest dates, giving rise to increased depth of flavour and complexity in the finished wine. Winemaking Madfish Premium Red is a modern blend of six traditional grape varieties and is crafted to produce a wine with a complete palate profile. After crushing, the grapes are fermented in stainless tanks with traditional pump over to extract colour, tannin and flavour. Maturation in French oak barriques for 8 months produces a wine packed full of ripe fruit flavours and supple oak tannins. Tasting Notes Deep, dense ruby and garnet in colour with characteristic Cabernet aromas of black and blue berry fruits and freshly rubbed dry herbs. The palate is rich and fleshy from the Merlot contribution, with juicy blackberry, fresh mushrooms and floral notes. Ripe open-knit fruit tannins are well integrated with the use of fine grain French oak.

2017 White SBS (12 x 750ml), Margaret River by Greenpiper Distributors, 13.4% Alc/Vol, Tasting Notes: . Modern white wine making techniques were used with temperature controlled critical from the vineyard through to the winery. The fruit is de-stemmed and crushed then must chilled and pressed off the skins quickly. It is allowed to settle for 48-72 hours before being racked in a clarified state to a fermentation tank. A range of selected yeasts are employed on the two different parcels of fruit before being transferred to temperature controlled stainless steel tanks.

The preceding winter and early spring rainfall provided a good base of ground water for the vines to thrive. November was warm and dry, setting up the vines perfectly through flowering and fruit set. An extended, dry and warm summer through to the end of picking in mid-April, produced outstanding fruit to make wine from. All grapes harvested this season are of exceptional quality and showing great varietal characteristics. Winemakers Comments Sweet red is a style for those wine drinkers who often find red wines somewhat dry and tannic. There is often a cultural aspect to this and out of respect of this we have made this wine to suit those who really enjoy this style of wine. Definitely a wine to serve chilled for best enjoyment. Tasting Notes Colour: Dark garnet red. Nose: This wine is full of sweet berry flavours. Blackberries, blueberries, mulberries and hints of raspberries. Palate: As for the nose, there are abundant berry flavours on the palate. Underlying the berries are savoury spices and mocha flavours. This wine is unmistakably a sweet red.

2018 Tammar Gully Late Harvest (12 x 750ml), Blackwood Valley by Dickinson Estate, 13.8% Alc/Vol, Tasting Notes: Aromas of abundant floral notes with citrus and passionfruit undertones. Medium bodied with silky tannins and a fruit driven palate of cherries and plums this wine is textured, with a long, smooth finish. 2017 Walker & Wilde Shiraz (12 x 750ml), Manjimup by Graphite Road Estate, 13.6% Alc/Vol, Tasting Notes: COLOUR Bright red with a ruby hue. NOS E Aromas of raspberry, savoury spice with a hint of pepper and chocolate. PALAT E Elegant savoury red fruit flavours carried to a long finish by fine, dusty tannins. W INEMAK ING NOT E S Grapes were picked during the early hours of the morning while it was cool to allow cold soaking to gently extract colour and skin tannins. The grapes were fermented in open fermenters to allow gentle pump-overs three times a day. Post alcoholic fermentation the wine was transferred to 30% new French and American oak barrels and 70% older French barrels for Malo-lactic fermentation. The wine was left to mature for 15 months before bottling. The wine was finned and filtered before bottling. V INTAGE R EPOR T The lead up to the 2017 vintage was slow, with a cool beginning to the year. Fruit set was high, so bunches were also plentiful. The cool conditions allowed slow, meticulous ripening, resulting in elegant flavours, crisp natural acids and balanced sugar accumulation. Patience was rewarded with beautifully ripened fruit arriving to the winery.

2012 Carldean Semillon (12 x 750ml), Perth Hills by Carldean Estate, 12.5% Alc/Vol, Tasting Notes: This complex style Semillon is aromatic and fresh with lively aromas of green apple and lime. The palate is powerful with zesty lime and mineral characters and subtle oak adds structure and complexity. The wine is full flavoured with a textural, long finish. Vitculture: Variety: 100% Carldenn grown Semillon (region: Perth Hills)Winemaking: The fruit was hand-picked at optimal ripeness to retain citrus/”limey” characters. The fruit was managed in two batches. One batch was fermented in a stainless steel tank while the second batch was pressed straight into a combination of new and aged French oak barrels where it was fermented and matured for over twelve months. The two batches were then blended and bottled.Food Pairings: This is a ‘textural’ Semillon which ensures it quite versatile with food matching and will also age in bottle very well. It pairs well with a range of seafood (sushi, sashimi, plus cooked seafood dishes), white meats (chicken, pork), a variety of pasta dishes or you can just enjoy it on its own! .

2017 Southern Chardonnay Single Vineyard (6x750 ml), Margaret River by Black Brewing Co, 12.7% Alc/Vol, GOLD MEDAL 95 Points, Tasting Notes: 100% Chardonnay - 100% Margaret River This Chardonnay is medium body, with Stone fruit minerality and a crisp acidity to be enjoyed now. hand harvested estate grapes along with a small parcel from the Burnside vineyard. The fruit was whole bunched pressed and allowed to settle overnight. The juice was racked and transferred to tank for fermentation with a portion of the blend wild fermented in old French oak barriques. The wine has fine tannins and good length. Fruit for this wine is from a coastal vineyard in Southern Margaret River. The fruit was handpicked ad destemmed int stone fermenters and left on skins for 21 days for structure and length. 2020 1840 Chenin Blanc (6x 750ml), Swan Valley by Sandalford Estate, 12.2% Alc/Vol, : Winemakers Comments Picked in early February 2019, these Chenin Blanc grapes were immediately crushed and pressed, with only the free run juice being used for this wine. The juice was all fermented in barrel but with a slight difference – whilst most of them were old French oak barrels, there was also 2 stainless steel barrels used. All barrels were inoculated with a selected yeast strains and the wine was left on lees for 5.5 months in barrel before blending and bottling. Tasting Notes Colour: Pale lemon with green edges Nose: Honey and quince with a floral lift. Palate: The flavours from the nose meet crisp green apples, with almonds and beeswax giving a beautiful savoury edge. This wine is textural on the palate and has a crisp finish with wonderful length.
